Many years ago, after culinary school, I decided to start my own catering business. My business was thriving, my clients loved what I prepared, and it was a fun career to be involved in. It has always been my goal to provide healthy meals for people, regardless of the event or the occasion. One afternoon I experienced a situation at a catering that forever changed the course of my career path.
At a birthday party, one of the dishes prepared was Baked Lemon Pepper Chicken Breasts. The dish was indeed a success, but as I was changing out a chaffing dish, I overheard a man say, "That's not fried, so it can't be good. I'm not eating it." My heart sank. To think that someone wasn't willing to try a dish based solely on the fact that it wasn't fried led me to make a decision that would set new wheels in motion for me. I set out to educate and inform anyone who would listen that one does not have to compromise their health in order to enjoy good food!
I returned to college to major in Nutrition/Dietetics in order to incorporate my knowledge of cuisine with the science of nutrition. I wasn't yet prepared for how this would revolutionize the way I would see food. It is because of this I seek to educate others on the importance of health and wellness; healthy does NOT equal boring, bland and tasteless.
I found my calling, and I couldn't be happier.
